Ayam Goreng Bandung

Bahan-bahan

  • 500 grams ayam negeri, potong-potong
  • 1 batang serai, memarkan
  • 300 ml air kelapa
  • 500 ml minyak goreng
  • garam secukupnya

Bumbu Halus

  • 5 butir bawang merah
  • 2 siung bawang putih
  • 2 butir kemiri, sangrai dulu
  • 1 cm jahe
  • 2 cm kunyit
  • 3 cm lengkuas, memarkan
  • 1/2 sendok makan ketumbar bubuk

Cara Membuat

  • Panaskan 2 sendok makan minyak goreng, tumis bumbu halus dan serai hingga harum. Masukkan ayam dan garam, aduk rata.
  • Tuangkan air kelapa, biarkan hingga ayam lunak dan air kelapa habis. Angkat dan tiriskan.
  • Panaskan minyak goreng, goreng ayam hingga berwarna kecoklatan.
  • Angkat dan sajikan dengan sambal dan jeruk nipis.

Bandung Style Fried Chicken

Ingredients

  • 500 grams chicken, cut into some parts
  • 1 lemongrass, flattened
  • 300 ml coconut water
  • 500 ml cooking oil
  • salt according to your taste

Ground Spices and Seasonings

  • 5 shallots
  • 2 cloves garlic
  • 2 candlenuts, fry without cooking oil first
  • 1 cm ginger
  • 2 cm turmeric
  • 3 cm galangal, flattened first
  • 1/2 tablespoon coriander powder

Method

  • Heat 2 tablespoons cooking oil, sauté ground spicess and lemongrass until aromatic. Add chickens and salt, stirred and mix well.
  • Add coconut water, wait until chickens become tender and coconut water dry. Take them out and drain.
  • Heat cooking oil, deep-fry chickens until they turns brownish.
  • Drained and then served with sambal (chili sauce) and a thick slice of calamondin or lemon.
