Bahan-bahan
- 1 ekor (800 gram) ayam buras, potong menjadi 8 bagian
- 1 liter santan dari 1 butir kelapa kupas
- 1 lembar daun salam
- 2 lembar daun jeruk purut
- 2 sendok makan bawang merah goreng untuk taburan
Bumbu Halus
- 8 butir bawang merah
- 4 siung bawang putih
- 1 sendok teh merica butiran, sangrai dulu
- 1/2 sendok teh jinten, sangrai dulu
- 1/2 cm jahe
- 1/2 cm lengkuas
- 1/2 sendok teh gula merah
- 1 sendok teh garam
Cara Membuat
- Didihkan santan bersama dengan bumbu halus, daun salam dan daun jeruk.
- Masukkan potongan ayam, masak hingga daging ayam lunak, santan hampir habis dan berminyak.
- Angkat ayam, sisihkan bumbunya.
- Gepuk-gepuk (pukul-pukul) tiap potongan ayam hingganya memar, sedikit melebar.
- Bakar potongan ayam di atas bara api sambil dibolak-balik hingga kecokelatan kedua sisinya dan kering.
- Angkat, letakkan di piring saji, siram dengan sisa bumbu dan taburi dengan bawang merah goreng. Sajikan hangat.
- Untuk 6 porsi, kalori tiap porsi: 325.

Grilled Striked-Chicken With Fried Sliced-Shallot
Ingredients
- 800-1000 grams chicken, cut into 8 parts
- 1 litre coconut milk
- 1 bay leaf
- 2 kaffir lime leaves
- 2 tablespoons fried-thinly-sliced-shallots for sprinkles
Ground Spices and Seasonings
- 8 shallots
- 4 cloves garlic
- 1 teaspoon coriander granules, oilless-fried or roasted first
- 1/2 cm ginger
- 1/2 galangal
- 1/2 teaspoon palm sugar
- 1 teaspoon salt
Method
- Boil coconut milk together with ground spicess, bay leaf and lime leaves.
- When boiling, add chickens, cook until chickens are tender, coconut milk nearly runs out and oily.
- Take out chickens and set aside the rest.
- Strike every chicken part until the meat a little bit widen.
- Grill chickens above charcoal until look brownish at both sides evenly and cryspy.
- Put on wide serving plate, pour the boiled seasonings on then sprinkle some fried sliced shallots on them.
