Telur Bumbu Petis

Resep #1

Bahan-bahan

  • 10 butir telur ayam
  • 10 buah bawang merah
  • 4 siung bawang putih
  • 3 buah cabai merah
  • 3 buah cabai rawit, iris tipis-tipis
  • 1 gelas santan
  • 1 sendok teh petis udang
  • 1 iris temu kunci
  • garam, gula dan merica secukupnya

Cara Membuat

  • Telur ayam direbus sampai matang, kupas kulitnya, sisihkan.
  • Bawang merah dan bawang putih diiris-iris tipis.
  • Cabai merah diiris tipis serong, temu kunci dimemarkan.
  • Semua bumbu tadi ditumis sampai berbau harum.
  • Masukkan petis udang, telur, santan, garam dan gula.
  • Bila santannya agak menyusut, tambahkan lada dan cabai irisan cabai rawit.

Bahan-bahan

  • 12 butir telur ayam
  • 250 cc santan
  • 100 grams petis
  • 10 butir cabai rawit utuh
  • garam, merica bubuk, gula, bawang goreng dan bubuk ayam secukupnya sesuai selera

Bumbu Halus

  • 7 grams bawang merah
  • 9 grams bawang putih
  • 6 biji cabai merah, dirajang
  • 5 butir kemiri
  • 5 lembar daun jeruk purut
  • 1/2 sendok teh jinten bubuk
  • 1/2 sendok teh ketumbar bubuk

Cara Membuat

  • Rebus telur sampai matang, dinginkan. Setelah itu kupas dan digoreng dalam minyak panas. Tiriskan dan sisihkan
  • Tumis bumbu halus hingga tercium bau harum.
  • Masukkan petis dan santan lalu aduk merata.
  • Masukkan telur, aduk merata, biarkan sampai santan mendidih.
  • Masukkan cabai rawit utuh dan bubuhkan garam, merica, gula dan bubuk ayam. Aduk-aduk supaya rata beberapa saat.
  • Angkat dan sajikan dengan ditaburi bawang goreng diatasnya.

Eggs in Fermented Shrimp Paste Sauce

Recipe #1

Ingredients

  • 10 eggs
  • 10 shallots
  • 4 cloves garlic
  • 3 red chilis
  • 3 bird’s eye chili, thinly sliced
  • 1 glass coconut milk
  • 1 teaspoon fermented shrimp paste
  • 1 thinly-sliced fingerroot
  • salt, sugar and pepper to taste

Method

  • Boil the eggs until weldone, shelled, set aside.
  • Shallots and garlic are thinly sliced.
  • Slice the red chili aslant and thinly, flaten fingerroot.
  • Heat cooking oil and sauté shallot, garlic, red chili and fingerroot until aromatic.
  • Add fermented shrimps paste, eggs, coconut milk, salt and sugar.
  • When coconut milk lesser, add sliced bird’s eye chili and pepper.

Ingredients

  • 12 eggs
  • 250 cccoconut milk
  • 100 grams fermented shrimp paste
  • 10 butir bird’s eye chili, leave them intact
  • salt, pepper, sugar, fried sliced-garlic and chicken flour to taste

Ground Spices and Seasonings

  • 7 grams shallots
  • 9 grams garlics
  • 6 red chilis
  • 5 candlenuts
  • 5 kaffir lime leaves
  • 1/2 teaspoon cumin flour
  • 1/2 teaspoon coriander flour

Method

  • Boil the eggs until weldone, then let them cooled down. After that peeled and deepfried for some moment. Drained and set aside.
  • Reduce cooking oil until approx 2 tablespoons of it left, sauté the ground spices until aromatic.
  • Add fermented shrimps paste and coconut milk then evenly stirred.
  • Add eggs, evenly stirred, wait until coconut milk boiling.
  • Add bird’s eye chili, salt, pepper, sugar and chicken powder, stirred briefly.
  • Served with fried thinly-sliced-garlic as topping.
