Sambal Goreng Hati Sapi

Resep #1

Bahan-bahan

  • 500 grams hati sapi
  • 500 grams kentang bulat kecil
  • 300 grams udang segar, biarkan dengan kulitnya
  • 250 ml santan kental
  • 5 buah cabai merah, iris tipis-tipis
  • 3 lembar daun salam
  • 3 cm lengkuas
  • 3 sendok makan minyak

Bumbu Halus

  • 100 grams cabai merah
  • 12 butir bawang merah
  • 4 siung bawang putih
  • 1 ruas jari jahe

Cara Membuat

  • Rebus hati sapi hingga 1/2 matang. potong-potong seukuran dadu, sisihkan.
  • Cuci kentang dan sikat kulitnya bersih-bersih, sisihkan.
  • Panaskan minyak, tumis bumbu bersama daun salam dan lengkuas sampai harum.
  • Masukkan udang , aduk-aduk sebentar.
  • Tambahkan potongan hati serta kentang, tuangkan santan lalu aduk hingga rata.
  • Saat mendidih, masukkan cabai merah iris. Masak terus hingga kuah mengering dan kentang masak.
  • Siap dihidangkan.

Bahan-bahan

  • 500 grams hati sapi
  • 7 buah bawang merah, iris tipis, goreng
  • 3 siung bawang putih, iris tipis, goreng
  • 2 papan petai, kupas belah dua
  • 50 grams cabai merah, potong serong, goreng sampai layu, angkat dan sisihkan
  • air asam jawa secukupnya
  • gula jawa secukupnya
  • terasi secukupnya
  • garam secukupnya

Bumbu Halus

  • 50 cabai merah, buang bijinya
  • 6 butir bawang merah
  • 3 siung bawang putih

Cara Membuat

  • Hati sapi dipotong dadu, goreng sampai kering, angkat dan sisihkan.
  • Tumis bumbu yang dihaluskan sampai harum baunya. Masukkan gorengan hati. Aduk-aduk.
  • Tambahkan air asam, gula jawa, terasi dan garam. Aduk sebentar supaya rata.
  • Masukkan petai, aduk-aduk sampai petai matang.
  • Masukkan cabai merah goreng, bawang merah dan bawang putih goreng. Aduk-aduk rata.
  • Siap dihidangkan.

Spicy Beef Liver

Ingredients

  • 500 grams beef liver
  • 500 grams small round potatoes
  • 300 grams fresh prawns, let them intact with the shell
  • 250 cc thick coconut milk
  • 5 red chilis, thinly sliced
  • 3 bay leaves
  • 3 cm galangal
  • 3 tablespoons cooking oil

Ground Spices and Seasonings

  • 100 grams red chili
  • 12 shallots
  • 4 cloves garlic
  • 2 cm ginger

Method

  • Boil beef liver until medium then diced, set aside.
  • Let potatoes intact, just washed cleanly, set aside.
  • Heat cooking oil, sauté ground spices together with bay leaves and galangal until fragrant.
  • Add prawns and stirred for a moment.
  • Add diced liver and intact potatoes, add also coconut milk then evenly stirred.
  • When boiling, add sliced red chili. Cook until potatoes cooked and coconut milk dried.
  • Served.

Ingredients

  • 500 grams beef liver
  • 7 shallots, thinly sliced, fried
  • 3 cloves garlic, thinly sliced, fried
  • 2 pods petai beans, peeled, longwise splitted into 2 parts each seed
  • 50 grams red chili, aslant and thinly sliced then fried until wilted, set aside
  • tamarind juice to taste
  • palm sugar to taste
  • shrimp paste to taste
  • salt to taste

Ground Spices and Seasonings

  • 50 red chilis, seeded
  • 6 shallots
  • 3 cloves garlic

Method

  • Dice beef liver, fried until done, set aside.
  • Sautéed ground spices until aromatic. Add fried beef liver, finely stirred.
  • Add tamarind juice, palm sugar, shrimp paste and salt. finely stirred.
  • Add petai beans, stirred until petai beans brightly colored.
  • Add fried red chili, fried sliced-shallot and fried sliced-garlic. Finely stirred.
  • Ready to be served.
