Sambal Ampela (Rempela) Hati Ayam

Bahan-bahan

  • 1 kilogram hati-ampela ayam
  • 3 siung bawang putih, haluskan
  • 200 grams cabai merah, beberapa dirajang (iris-iris) besar, sisanya dihaluskan
  • 50 grams bawang merah, haluskan
  • 3 gelas santan kental dari 1 buah kelapa
  • 2 ruas jari lengkuas, memarkan
  • 3 lembar daun salam
  • minyak goreng untuk menumis secukupnya
  • asam secukupnya
  • gula secukupnya
  • garam secukupnya

Cara Membuat

  • Hati-ampela dikukus atau direbus sampai matang. Potong-potong dadu. Kemudian goreng setengah kering.
  • Tumis bawang putih halus, bawang merah halus, cabai merah halus, lengkuas, daun salam, gula, asam, garam sampai berbau harum.
  • Tambahkan ampela-hati dan cabai merah rajangan. Aduk-aduk rata dengan bumbu.
  • Masukkan santan. Masak terus sampai santan habis.
  • Siap dihidangkan.

Spicy Chicken Liver-Gizzard

Ingredients

  • 1 kilogram chicken liver and gizzard
  • 3 cloves garlic, finely chopped
  • 50 grams shallots, finely chopped
  • 200 grams red chilis, few are sliced, rest finely chopped or blended
  • 600 thick coconut milk
  • 4 cm galangal, crushed
  • 3 bay leaves
  • cooking oil for sautéing
  • sugar to taste
  • salt to taste
  • tamarind to taste

Method

  • Steam or Boil chicken liver-gizzard until cooked. After that 1×1 cm diced. Then fried half crispy. Set aside.
  • sauté garlic, shallot, chopped/blended red chilis, galangal, bay leaves, sugar, tamarind and salt until aromatic.
  • Add chicken liver-gizzard and sliced red chili. Evenly stirred.
  • Add coconut milk. Cook until coconut milk dry.
  • Ready to be served.
