Rempela Hati Ayam Masak Habang

Bahan-bahan

  • 10 rempela ayam, belah dua, kerat dipinggirnya
  • 10 hati ayam, masing-masing belah dua
  • 1 sendok teh garam
  • 2 sendok makan air asam (dari 1 sendok asam dan 2 sendok air)
  • 3 sendok makan kecap manis
  • 3 sendok makan minyak goreng untuk menumis
  • 2 buah tomat, potong-potong

Bumbu Halus

  • 150 gram cabai merah
  • 10 butir bawang merah
  • 5 siung bawang putih
  • 1 sendok teh terasi
  • 1 sendok teh kencur
  • 2 sendok teh jahe
  • garam dan gula merah secukupnya
  • air secukupnya

Cara Membuat

  • Remas-remas rempela dan hati ayam dengan air asam dan garam. Diamkan selama 10 menit.
  • Goreng sampai kecoklatan. Tiriskan.
  • Tumis bumbu halus hingga matang. Masukan tomat dan air. Biarkan hingga mendidih.
  • Masukkan ampela, hati ayam dan kecap manis.
  • Masak sampai matang dan kuah mengental.

Chicken Liver and Gizzard Cooked in Red

Ingredients

  • 10 Chicken liver, splitted into 2 parts
  • 10 Chicken gizzard, splitted into 2 parts, scratch at the sides.
  • 1 teaspoon salt
  • 2 spoonful tamarind water (from 1 tablespoon tamarind and 2 spoonful water)
  • 3 spoonful sweet soysauce
  • 3 spoonful cooking oil
  • 2 tomatoes, each cut into pieces

Ground Spices and Seasonings

  • 150 grams red chili
  • 10 shallots
  • 5 cloves garlic
  • 1 teaspoon shrimp paste
  • 1 teaspoon aromatic ginger
  • 2 teaspoon ginger
  • salt and palm sugar to taste
  • water to taste

Method

  • Softly squeeze chicken liver and gizzard with tamarind water and salt. Set aside for 10 minutes. Then fried until light-brownsihed.
  • Sauté ground flavors until cooked. Add tomatoes and water. Leave it until boiling.
  • Add liver, gizzard and soysauce. Stirred now and then until cooked and sauce thickened.
