Jerang air secukupnya, masukkan cuka air, daun salam, sereh, merica, garam dan gula. Biarkan sampai mendidih.
Masukkan jamur merang dan jamur kuping tunggu mendidih, masak selama 5 menit, angkat jamur dan saring, biarkan airnya mendidih sampai beberapa saat, lalu angkat, tunggu sampai hangat.
Tempatkan jamur di dalam stoples bersama dengan daun salam dan sereh yang tadi ikut direbus, tuang air rebusan yang sudah hangat, tunggu hingga air dingin.
Tutup stoples rapat-rapat. Cuka bisa disajikan keesokan harinya.
