4-5 sendok makan jelantah (minyak bekas menggoreng)
Bumbu Halus
4 cm kunyit
4 cm jahe
2 cm lengkuas
1 sendok teh garam
3 sendok makan air jeruk nipis
Percikan
75 ml santan dari 1/2 butir kelapa
2 sendok makan cabai halus
Campur kedua bahan ini
Cara Membuat
Siangi ikan, cuci bersih lalu gurat-gurat sisi tubuhnya. Lumuri dengan bumbu halus, agar bumbu meresap biarkan selama 3-4 jam. Jika disimpan di koelkast bisa dibiarkan lebih lama lagi.
Potong cabai rawit menjadi 2-3 bagian per buahnya, sementara bawang merah diris-iris kasar. Kemudian campur irisan cabai dan bawang merah tersebut dengan air jeruk nipis, garam dan gula pasir. Aduk rata dan sisihkan dalam jangka waktu agak lama agar menjadi acar.
Menjelang dihidangkan, panggang ikan di atas bara api. Perciki dengan bahan percikan, bolak-balik agar matang secara merata. Sementara itu campur acar cabai dengan minyak jelantah.
Setelah masak letakkan di piring saji. Siram dengan acar cabai.
