Urap-urap

Bahan-bahan

  • 100 grams kacang panjang, potong-potong kira-kira 4 cm
  • 100 grams kol, potong-potong kira-kira 3 X 5 cm atau sesuai selera
  • 100 grams kecambah
  • 1 ikat kangkung, potong-potong kira-kira 4 cm atau sesuai selera
  • 1 ikat kemangi, ambil daunnya
  • 3 sendok makan air asam
  • 1/2 butir kelapa setengah tua

Bumbu Halus

  • 5 butir bawang merah
  • 3 siung bawang putih
  • 2 buah cabai merah
  • 2 sendok teh terasi
  • 2 ruas jari kencur
  • 1 sendok makan garam

Cara Membuat

  • Semua sayuran dicuci bersih lalu direbus atau dikukus kecuali kemangi dibiarkan mentah.
  • Kelapa dikupas dan diparut memanjang.
  • Bumbu halus dicampur dengan air asam dan dicampurkan dengan kelapa parut, aduk-aduk hingga rata. Selanjutnya dikukus.
  • Hidangkan dengan cara semua sayuran dicampur dengan bumbu kelapa yang telah dikukus dan diaduk-aduk rata.

Mix Vegetables with Spicy Grated Coconut Granules

Ingredients

  • 100 grams string beans, 4 cm sliced
  • 100 grams cabbage, 3×5 cm or to taste sliced
  • 100 grams sprouts
  • 100 grams water spinach, 4 cm or to taste sliced
  • 50 grams basil, use the leaves only
  • 3 tablespoons tamarind juice (mixture of tamarind and water 1:1)
  • 1/2 coconut, shelled and peeled then longwise grated

Ground Spices and Seasonings

  • 5 shallots
  • 3 cloves garlic
  • 2 red chili
  • 2 teaspoon shrimp paste
  • 4 cm aromatic ginger
  • 1 tablespoon salt

Method

  • All vegetables, after washed, are boiled or steamed but basil leaves are left raw.
  • Ground spices is mixed with tamarind juice then mixed with grated coconut granules, evenly stirred, then steamed.
  • Served by all vegetables are mixed together with steamed grated coconut granules, evenly stirred.
  • As side dish of cooked rice.
