Serundeng Ayam

Bahan-bahan

  • 1 ekor ayam
  • 1 butir kelapa ukuran sedang, parut kasar
  • 1 cm lengkuas
  • 5 lembar daun jeruk purut
  • 1 batang sereh, dimemarkan
  • garam dan asam jawa secukupnya
  • minyak goreng secukupnya

Bumbu Halus

  • 5 butir bawang merah
  • 3 siung bawang putih
  • 2 sdt ketumbar, sangrai terlebih dulu
  • 1/2 sdt jinten, sangrai terlebih dulu
  • 5 buah cabai merah
  • garam dan gula pasir secukupnya

Cara Membuat

  • Ayam dibersihkan lalu dipotong kecil-kecil. Kemudian remas dengan asam jawa dan garam, sisihkan dan diamkan agar bumbu meresap. Setelah itu digoreng dengan minyak panas sampai matang, angkat dan sisihkan.
  • Campur kelapa parut dengan bumbu yang dihaluskan, lengkuas, daun jeruk purut dan sereh. Sangrai di atas api sedang sampai kelapa kering kecoklatan.
  • Masukkan ayam goreng, aduk rata lalu angkat.
  • Enak disantap dengan nasi hangat dan sambal.

Chicken Roasted Grated-Coconut

Ingredients

  • 1 chicken
  • 1 medium size coconut, coarsely grated
  • 1 cm galangal
  • 5 kaffir lime leaves
  • 1 stalk lemongrass, crushed
  • salt and tamarind to taste
  • cooking oil to taste

Ground Spices and Seasonings

  • 5 shallots
  • 3 cloves garlic
  • 2 teaspoons coriander grains, roasted first
  • 1/2 teaspoon cumin, roasted first
  • 5 red chilis
  • salt and sugar to taste

Method

  • Wash then cut chicken into small pieces. Then squeezed together with salt and tamarind, set aside for some moment to let the flavors infuse. After that fried in hot cooking oil until cooked, removed and set aside.
  • Mix grated coconut with ground spices, galangal, lime leaves and lemongrass. Then using a wok, it is roasted on medium flame until grated coconut dried and bright-brownish.
  • Add fried chicken, stirred for some moment evenly then remove from stove.
  • Nice to be eaten together with warm cooked rice and chili sauce.
