Sayur Kecipir Muda

Bahan-bahan

  • 350 grams kecipir muda
  • 100 grams ketimun hijau
  • 1/2 buah nanas, iris-iris tipis
  • 200 grams tetelan daging sapi
  • 1 lembar daun salam
  • 2 mangkok santan
  • 2 sendok makan minyak goreng
  • 3 sendok makan bawang merah goreng
  • garam secukupnya

Bumbu Halus

  • 5 buah cabai merah, direbus
  • 5 butir bawang merah
  • 3 siung bawang putih
  • 3 butir kemiri
  • 1 bay leaf
  • 1 cm jahe
  • 1 cm lengkuas
  • 1/2 sendok teh terasi
  • 2 sendok teh gula Jawa

Cara Membuat

  • Kecipir muda dan ketimun hijau diiris-iris melintang tipis. Kemudian lumuri dengan garam sampai layu, baru dicuci bersih.
  • Rebus tetelan daging sapi sampai lunak, kemudian potong-potong 1 cm.
  • Panaskan minyak dan tumis bumbu halus sampai beraroma.
  • Masukkan ketimun, daun salam, kecipir muda dan tetelan daging sapi. Aduk-aduk.
  • Masukkan irisan nanas dan santan. Biarkan sampai mendidih.
  • Saat menjelang diangkat, taburi dengan bawang merah goreng.

Winged Bean in Coconut Milk Soup

Ingredients

  • 350 grams young winged beans
  • 100 grams green cucumber
  • 1/2 pineapple, thinly sliced
  • 200 grams beef
  • 2 bowls coconut milk
  • 2 tablespoons cooking oil
  • 3 tablespoons fried thinly-sliced-shallot
  • salt to taste

Ground Spices and Seasonings

  • 5 red chilis, boiled first
  • 5 shallots
  • 3 cloves garlic
  • 1 cm ginger
  • 1 cm galangal
  • 1/2 teaspoon terasi (shrimp paste)
  • 2 teaspoons palm sugar

Method

  • Winged beans and cucumber are thinly crosswise sliced, then smeared with salt until wilted then washed.
  • Heat cooking oil, sauté ground spices until aromatic.
  • Add cucumber, bay leaf, winged beans and beef. Stirred.
  • Add sliced pineapples and coconut milk. Leave it boiling a moment.
  • Just before lifted from stove, sprinkle some fried sliced-shallot.
