Sambal Goreng Telur

Bahan-bahan

  • 7 buah telur
  • 1 sendok makan bawang merah goreng
  • 1/2 jari lengkuas, memarkan
  • 1/2 jari serai, memarkan
  • 2 lembar daun salam
  • 4 gelas santan kental
  • enough cooking oil

Bumbu Halus

  • 5 buah cabai merah, buang bijinya
  • 4 buah bawang merah
  • 3 siung bawang putih
  • 2 mata asam jawa, tanpa bijinya
  • garam secukupnya

Cara Membuat

  • Telur direbus matang, kupas kulitnya lalu digoreng sampai berwarna kekuningan.
  • Tumis bumbu halus bersama dengan daun salam, lengkuas dan serai sampai berbau harum.
  • Masukkan santan kental sampai mendidih, sambil sesekali diaduk.
  • Masukkan telur, biarkan bebrapa saat sampai kuah santan berkurang dan benar-benar kental.
  • Saat dihidangkan, taburi dengan bawang merah goreng.

Spicy Egg

Ingredients

  • 7 eggs
  • 1 tablespoon fried onion slices (fried shallot slices)
  • 1 cm galangal, crush
  • 2 cm lemongrass, crush
  • 2 bay leaves
  • 750 ml thick coconut milk
  • enough cooking oil

Ground Spices and Seasonings

  • 5 red chilis, seeded
  • 4 shallots
  • 3 cloves garlic
  • 2 eyes tamarine, without the seeds
  • salt to taste

Method

  • Boil eggs until weldone, shelled then fried until the color is yellowish. Drain them set aside.
  • Reduce the oil until 2-3 tablespoons left. Sauté the ground spices together with bay leaves, galangal and lemongrass until fragrant.
  • Add all coconut milk, stirred until it is boiled.
  • Add all eggs, stirred now and then until the coconut milk much reduced and becomes very thick.
  • Servee with the fried onion slices topping.
