Sambal Goreng Rebung

Bahan-bahan

  • 2 mangkuk rebung yang telah dirajang sebesar batang korek api
  • 2 mangkuk santan kental
  • 100 grams udang, kupas dan cuci bersih
  • 2 buah tomat, potong-potong
  • 1 lembar daun salam
  • 1 potong lengkuas
  • cabai rawit secukupnya, iris-iris serong
  • minyak goreng secukupnya

Bumbu Halus

  • 5 butir bawang merah
  • 2 siung bawang putih
  • 4 buah cabai merah
  • 3 biji kemiri
  • 1/2 sendok teh terasi
  • 1/2 sendok teh garam
  • 1/2 sendok teh gula

Cara Membuat

  • Rebus rebung hingga empuk, sisihkan
  • Panaskan minyak. Tumis bumbu halus bersama daun salam, cabai rawit dan lengkuas sampai beraroma.
  • Masukkan rebung bersama tomat, aduk hingga tercampur dengan bumbu.
  • Tuangkan santan, biarkan hingga santan mengental baru diangkat.

Spicy Bamboo Sprout

Ingredients

2 bowls juliene-cutted bamboo shoot
2 bowls thick coconut milk
100 grams prawn, shelled and washed well
2 tomatoes, cut into 4 pieces each
1 bay leaf
5 centimeter galangal
bird’s eye chili to taste, oblique cut
cooking oil

Ground Spices and Seasonings

5 shallots
2 cloves garlic
4 red chilis
3 candlenuts
1/2 teaspoon shrimp paste
1/2 teaspoon salt
1/2 teaspoon sugar

Method

Cook bamboo shoot until cooked and soft, set aside.
Heat some cooking oil, sauté ground spices together with bay leaf, bird’s eye chili and galangal until aromatic.
Add bamboo shoot and tomatoes, stirred until mixed with seasoning well.
Pour coconut milk, wait until coconut milk becomes very thick.
