Sambal Bajak Telur Puyuh

Bahan-bahan
  • 25 butir telur puyuh, rebus, kupas kulitnya, goreng
  • 100 cc santan sedang kekentalannya
  • 3 lembar daun jeruk
  • 2 lembar daun salam
  • 3 sendok makan minyak untuk menumis
  • 2 tangkai serai, memarkan
  • air asam secukupnya
Bumbu Halus
  • 6 cabai merah
  • 3 siung bawang putih
  • 5 butir bawang merah
  • 1 sendok teh terasi
  • garam secukupnya
Cara Membuat
  • Tumis bumbu halus bersama daun jeruk, daun salam dan terasi sampai harum.
  • Masukkan telur, aduk-aduk sampai telur terbungkus bumbu.
  • Tuangkan santan. Bubuhi garam dan air asam. Tunggu hingga mendidih, biarkan sebentar, lalu angkat.

Spicy Sauted Quail Eggs

Ingredients
  • 25 quail eggs, boiled, peeled then fried
  • 100 cc coconut milk
  • 3 lime leaves
  • 2 bay leaves
  • 2 lemongrasses
  • 3 tablespoons cooking oil to sauté
  • 1 teaspoon tamarind juice or to taste
Ground Spices and Seasonings
  • 6 red chilis
  • 3 cloves garlic
  • 5 shallots
  • 1 teaspoon terasi (shrimp paste)
  • salt to taste
Method
  • Heat Cooking oil, sauté ground spicess together with lime leaves, bay leaves and shrimp paste until aromatic.
  • Add eggs, stirred so that all eggs covered by seasoning.
  • Add coconut milk, add salt and tamarind juice, stirred a moment then wait until boiling before lifted from stove.
