Rempeyek Teri

Bahan-bahan

  • 50 grams teri nasi
  • 50 grams tepung kanji
  • 135 grams tepung beras
  • 250 ml air kelapa
  • 1 kuning telur
  • 3/4 sendok teh garam
  • minyak goreng secukupnya

Bumbu Halus

  • 5 butir kemiri, disangrai dahulu
  • 5 cm kencur
  • 3 siung bawang putih
  • 1/2 sendok teh ketumbar, disangrai dahulu

Cara Membuat

  • Campur dan aduk bumbu halus, telur, air kelapa dan garam sampai rata.
  • Tuang tepung kanji dan tepung beras ke campuran.
  • Ambil satu sendok sayur adonan, tambahkan teri nasi secukupnya.
  • Tuang ke tepi wajan panas. Siram-siram dengan minyak panas sampai rempeyek lepas dari wajan. Goreng sampai renyah.
  • Untuk 15 keping.

Anchovy Rempeyek

Ingredients

  • 50 grams anchovy
  • 50 grams tapioca starch
  • 135 rice flour
  • 250 cc coconut water
  • 1 egg
  • 3/4 teaspoon salt
  • cooking oil for deepfrying

Ground Spices and Seasonings

  • 5 candlenuts, oilless fried or roasted first
  • 5 cm aromatic ginger
  • 3 cloves garlic
  • 1/2 teaspoon coriander, oilless fried or roasted first

Method

  • Mix ground spices, egg, coconut water and salt, stirred evenly.
  • Add starch and rice flour, stirred evenly until you got thick dough.
  • Heat cooking oil on a wok. Take a laddle of dough out, pour on the side of wok.
  • Fry until crispy. For ± 15 pieces.
