Opor Ayam

Bahan-bahan

  • 1 ekor ayam ukuran sedang
  • 1 liter santan encer
  • 1/2 liter santan kental
  • 2 lembar daun jeruk purut
  • 2 lembar daun salam
  • 1 batang serai dimemarkan

Bumbu Halus

  • 8 butir bawang merah
  • 4 siung bawang putih
  • 5 butir kemiri
  • 1 sendok teh ketumbar
  • 1/2 jari lengkuas
  • 1/2 sendok teh jinten
  • lada, garam dan gula secukupnya

Cara Membuat

  • Ayam dipotong-potong menurut selera, dicuci bersih.
  • Tumis bumbu halus sampai berbau harum, tambahkan serai, daun jeruk purut dan daun salam.
  • Masukkan ayam, aduk-aduk supaya rata dan masak terus sampai ayam terlihat layu.
  • Masukkan santan encer. Setelah agak surut, tambahkan santan kental. Bila ayam sudah empuk baru diangkat dan dihidangkan.

Chicken Braised in Coconut Milk

Ingredients

  • 1 chicken, medium size
  • 1000 cc thin coconut milk
  • 500 cc thick coconut milk
  • 2 kaffir lime leaves
  • 2 bay leaves
  • 1 lemongrass, crushed

Ground Spices and Seasonings

  • 8 shallots
  • 4 cloves garlic
  • 5 candlenuts
  • 1 teaspoon coriander
  • 4 cm galangal
  • 1/2 teaspoon cumin
  • salt, pepper and sugar to taste

Method

  • Cut chicken into to taste then washed.
  • sauté ground spices until aromatic, add lemongrass and lime leaves.
  • Add chickens, stirred evenly and keep on cooking until chickens look wilted.
  • Add thin coconut milk. When looks reduced, add thick coconut milk.
  • When chickens are tender already, lift from stove and served.
