Kroket Kentang

Bahan-bahan

  • 500 gram kentang, kupas, kukus dan haluskan
  • 1 sendok makan susu bubuk
  • 2 butir telur ayam
  • 1 sendok makan mentega
  • garam dan merica bubuk secukupnya
  • minyak goreng secukupnya
  • tepung roti (panir) secukupnya

Bahan Isi

  • 200 gram daging cincang
  • 125 ml air
  • 50 gram wortel, kupas potong-potong kecil halus
  • 1 sendok makan margarine
  • 3 butir bawang merah, rajang halus
  • 2 siung bawang putih, rajang halus
  • 1 sendok makan tepung terigu, larutkan dengan sedikit air
  • garam dan merica secukupnya

Cara Membuat

  • Tumis bawang merah dan bawang putih dengan margarine sampai harum. Masukkan wortel, daging cincang, air, garam, merica dan sedikit gula pasir. Aduk-aduk sebentar kemudian tambahkan tepung terigu yang sudah dicairkan dengan seikit air, aduk-aduk lagi sampai matang. Angkat tunggu hingga dingin.
  • Kentang yang telah halus dicampur dengan margarine, susu bubuk, garam, merica. Tambahkan 1 butir telur remas-remas sampai rata.
  • Ambil adonan kentang secukupnya, beri adonan daging cincang dan wortel, bentuk bulat lonjong. lanjutkan hingga semua adonan habis.
  • Celupkan satu per satu kroket ke kocokan telur kemudian gulingkan di atas tepung panir.
  • Goreng dalam minyak panas hingga tenggelam (deep fry) hingga berwarna kecoklatan. Angkat dan tiriskan. Sajikan dengan saus taoco dan cabai rawit hijau.

Potato Croquette

Ingredients

  • 500 grams potato, peeled, steamed then finely mashed
  • 1 spoonful milk powder
  • 2 eggs
  • 1 spoonful butter
  • salt and pepper to taste
  • breadcrumb to taste
  • cooking oil to deepfrying

Filling

  • 200 grams mincemeat
  • 125 cc water
  • 50 grams carrot, peeled then cut into very small pieces
  • 1 spoonful butter
  • 3 shallots, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 spoonful wheat flour, dissolved in a little water
  • salt and pepper to taste

Method

  • Heat butter, sauté shallot and garlic until aromatic.
  • Add carrot, mincemeat, water, salt, pepper. Stirred a while then add wheat flour solution, stirred again until cooked. Cooled down.
  • Meanwhile mashed potato blended with butter, milk powder, salt and pepper, 1 egg as well. Squeezed with hand until finely mixed.
  • Take some potato dough to taste, flattened but no too thin, put some mincemeat and carrot mixture on it, shaped rounded-oval. Repeat until the last dough.
  • Dip one by one into stirred egg then rolled over breadcrumb evenly.
  • Deepfried in hot cooking oil until bright-brownished. Drained then served.
