Kerupuk Udang

Bahan-bahan

  • 1 kg udang
  • 1 kg tepung kanji

Bumbu Halus

  • 5 butir bawang putih
  • 1 sdm gula
  • garam secukupnya

Cara Membuat

  • Udang dikupas bersih, kepalanya diputus dan dibuang, kemudian digiling halus.
  • Udang giling kemudian dicampur dengan kanji dan bumbu yang telah dihaluskan, tambahkan air secukupnya untuk kemudian diuleni sampai menjadi adonan yang cukup padat, jangan terlalu lembek.
  • Bentuk bulat memanjang, lalu dikukus beberapa saat sampai matang. Angkat dan biarkan dingin.
  • Jika sudah dingin, iris-iris tipis dan dijemur hingga kering betul.

Fried Crab with Tauco Sauce

Ingredients

  • 1 kg shrimp
  • 1 kg starch flour

Pulverized Condiment

  • 5 cloves garlic
  • 1 spoon sugar
  • salt to taste

Method

  • Shell shrimp, remove the head then to be minced finely. After that mixed with starch, garlic, sugar and salt. Add some water then mixed again by stirring with hand until becomes solid mixture, not too soft.
  • Form the mixture long and round (3-5 cm diameter), then steam it till done. Take it out of the steamer and let it be cold.
  • Slice across as thin as possible then put all the slices under the sun shine until really dry.
  • Deep fry some pieces in hot cooking oil till they are floating, raise from the cooking oil then drain them. Repeat pieces by pieces.
  • These crackers are served as snacks or as acompaniment of nasi or main dish.
