Kare Ayam

Bahan-bahan

  • 1 ekor ayam ukuran sedang
  • 400 cc santan kental
  • 2 sendok makan mentega
  • 2 lembar daun jeruk purut
  • 2 lembar daun salam
  • 1 batang serai dimemarkan
  • 2 sendok makan minyak untuk menumis
  • asam Jawa, gula dan garam secukupnya

Bumbu Halus

  • 10 butir bawang merah
  • 4 siung bawang putih
  • 3 butir kemiri
  • 3 cabai merah
  • 1 sendok teh ketumbar
  • 2 cm kunyit
  • 1/2 sendok teh jinten

Cara Membuat

  • Ayam dipotong-potong, dicuci bersih.
  • Tumis bumbu halus sampai berbau harum.
  • Masukkan ayam, daun jeruk purut, daun salam, asam dan garam. Aduk-aduk supaya rata dan masak terus sampai ayam terlihat layu.
  • Masukkan santan, diaduk-aduk. Jika sudah mendidih, api kecilkan tetapi masak terus hingga santan mengental dan keluar minyaknya.
  • Angkat dan hidangkan dengan ditaburi bawang goreng diatasnya.

Chicken Curry

Ingredients

  • 1 chicken, medium size
  • 400 cc thick coconut milk
  • 2 tablespoon butter
  • 2 kaffir lime leaves
  • 2 bay leaves
  • 1 lemongrass, crushed
  • 2 tablespoons cooking oil to sauté
  • tamarind, sugar and salt to taste

Ground Spices and Seasonings

  • 10 shallots
  • 4 cloves garlic
  • 3 candlenuts
  • 3 red chilis
  • 1 teaspoon coriander
  • 2 cm turmeric
  • 1/2 teaspoon cumin

Method

  • Cut chicken into some parts, washed.
  • Sauté the ground spices until aromatic.
  • Add chicken parts, lime leaves, bay leaves, tamarind and salt. Stirred for some moment and wait until chicken parts look wilted.
  • Add coconut milk, stirred. When boiling, reduce the heat and wait until coconut milk more thicken and looks oily.
  • Remove from stove and served with fried thinly-sliced-garlic as topping.
