Ikan Bumbu Kuning

Bahan-bahan

  • 1 ekor ikan mas atau tombro
  • 6 butir kemiri
  • 2 cm jahe
  • 2 cm kunyit
  • 2 lembar daun kunyit
  • 8 butir bawang merah
  • 3 lembar daun jeruk purut
  • 5 lembar daun serai
  • 1 genggam daun kemangi
  • 50 gram cabai rawit, biarkan utuh
  • 50 gram cabai hijau, iris serong
  • 1 sdm air jeruk nipis atau cuka
  • garam secukupnya
  • 4 sendok makan minyak goreng

Cara Membuat

  • Siangi ikan, lalu cuci bersih, bubuhi air jeruk atau cuka, diamkan selama 3-4 jam.
  • Haluskan kemiri, jahe, kunyit, bawang merah dan garam lalu tumis hingga harum, kemudian masukkan daun jeruk, daun serai, daun kunyit, cabai hijau dan cabai rawit. Aduk rata kemudian masukkan juga daun kemangi.
  • Setelah bumbu berwarna kuning, tuangi air secukupnya. Masak hingga mendidih. Lalu masukkan ikan dan masak terus hingga matang dan bumbunya meresap. Angkat dan hidangkan.

Fish in Yellow Condiment

Ingredients

  • 1 common carp
  • 6 candlenuts
  • 2 cm ginger
  • 2 cm turmeric
  • 2 turmeric leaves
  • 3 kaffir lime leaves
  • 5 lemongrass leaves
  • 8 shallots
  • 50 grams bird’s eye chili
  • 50 grams green chili, aslant sliced
  • 1 handful basil leaves
  • 1 tablespoon lime juice or vinegar
  • 4 tablespoon cooking oil
  • salt to taste

Method

  • After being washed, smear fish with lime juice or vinegar then let it stand for 3-4 hours.
  • Pulverize or blend together candlenut, ginger, turmeric, shallot and salt, then sautéed until fragrant.
  • Add lime leaves, lemongrass leaves, turmeric leaves, green chili and bird’s eye chili. Stirred then add also basil leaves.
  • When the ground spices is yellow already, add some water to taste. Cook until boiling.
  • Add fish and keep on cooking until fish is cooked.
