Daging Rica-rica

Bahan-bahan

  • 1000 gram daging sapi, potong-potong sesuai selera
  • 50 ml minyak goreng untuk menumis
  • 2 lembar daun salam
  • 2 batang serai, memarkan
  • 100 gram tomat, potong-potong
  • 1 liter santan dari 1 butir kelapa

Bumbu Halus

  • 100 gram canai merah
  • 10 butir bawang merah
  • 3 siung bawang putih
  • 50 gram jahe
  • 1/2 sendok makan lengkuas parut
  • garam secukupnya

Cara Membuat

  • Panaskan minyak, tumis bumbu halus, serai dan daun salam hingga harum.
  • Masukkan daging dan tomat, aduk rata. Tutup wajan, masak hingga daging berubah warna.
  • Tuang santan, masak hingga daging empuk dan santan mengental. Angkat.

Richa-richa Beef

Ingredients

  • 1000 grams beef, bite-size sliced or to taste
  • 50 cc cooking oil
  • 2 bay leaves
  • 2 stalks lemongrass, crushed
  • 100 grams tomatoes, sliced
  • 1 liter coconut milk

Ground Spices and Seasonings

  • 100 grams red chilis
  • 10 shallots
  • 3 cloves garlic
  • 50 grams ginger
  • 1/2 tablespoon grated galangal
  • salt to taste

Method

  • Heat cooking oil, sauté ground spicess until aromatic.
  • Add beef and tomatoes, stirred evenly. Cover the pan, cook until beef’s color changes.
  • Pour coconut milk, stirred awhile and keep on cooking until beef is tender and coconut oil thickens.
  • Remove from stove and ready to be served.
