Daging Goreng Bumbu Pedas

Bahan-bahan

  • 500 grams daging sapi
  • 1/2 butir kelapa untuk santan
  • 2 lembar daun salam
  • 1 potong lengkuas, dimemarkan
  • 1 batang serai, dimemarkan
  • 1 sendok teh garam
  • 1 sendok teh gula merah
  • minyak goreng secukupnya

Bumbu Halus

  • 5 biji cabai merah
  • 2 butir bawang merah
  • 2 siung bawang putih
  • 4 biji kemiri
  • 1 sendok teh ketumbar
  • garam secukupnya

Cara Membuat

  • Daging dicuci, dipotong-potong seperti empal. Dipukul-pukul sedikit.
  • Parut kelapa dan buatlah santan kental 1 cangkir dan santan encer 1 cangkir.
  • Bumbu halus, lengkuas, serai, daun salam dan santan encer direbus bersama sambil diaduk-aduk.
  • Jika sudah mendidih, masukkan daging, garam, gula sambil diaduk. Biarkan agak lama kemudian tambahkan santan kental, aduk-aduk dan tunggu sampai mengering kemudian angkat.
  • Panaskan minyak goreng di wajan, goreng daging hingga berwarna kecoklatan (kering).
  • Dihidangkan dengan ditaburi bawang goreng diatasnya.

Spicy Fried Beef

Ingredients

  • 500 grams beef
  • 200 cc thick coconut milk
  • 200 cc thin coconut milk
  • 2 bay leaves
  • 2 cm galangal, crushed
  • 1 lemongrass, crushed
  • 1 teaspoon salt
  • 1 teaspoon palm sugar
  • cooking oil

Ground Spices and Seasonings

  • 5 red chilis
  • 2 shallots
  • 2 cloves garlic
  • 4 candlenuts
  • 1 teaspoon coriander
  • salt to taste

Method

  • Cut beef to taste, then slightly hammered.
  • Boil together the ground spices, galangal, lemongrass, bay leaves and thin coconut milk, and frequently stirred.
  • When boiling, add the beef, salt and palm sugar, stirred a while. Then leave it boiling for some moment.
  • Add thick coconut milk, stirred some moments and wait until coconut milk dried. Remove from the stove.
  • Heat cooking oil, then deep fry the beef until crispy.
  • Serve with fried onion as topping.
