Cumi-Cumi Pedas

Bahan-bahan

  • 1 kilogram cumi-cumi ukuran sedang
  • 12 buah cabai rawit
  • 300 ml santan
  • 4 sendok makan minyak goreng

Bumbu Halus

  • 8 buah bawang merah
  • 2 siung bawang putih
  • 1/2 sendok teh merica halus
  • 2 ruas jari kunyit
  • 1 ruas jari jahe
  • 1 ruas jari lengkuas
  • 1 sendok teh air asam Jawa
  • 1 sendok teh gula Jawa
  • garam secukupnya

Cara Membuat

  • Buang kantung tinta, tulang tipis dan kulit ari cumi-cumi, kemudian cuci bersih dan potong melintang berbentuk cincin.
  • Haluskan semua bumbu dan tumis sampai harum.
  • Masukkan cumi-cumi, aduk-aduk sampai cumi kaku dan bumbu merata.
  • Tuangkan santan, masak sampai mendidih.
  • Masukkan cabai rawit. Tunggu beberapa saat sampai cabai agak layu, lalu angkat.

Spicy Squid

Ingredients

  • 1 kilogram medium size squid
  • 12 rawit chilis
  • 300 ml coconut milk
  • 4 tablespoons cooking oil

Mixed and blended

  • 8 shallots
  • 2 cloves garlic
  • 1/2 teaspoon pepper
  • 4 cm curcumine
  • 2 cm ginger
  • 2 cm galangal
  • 1 teaspoon tamarine water (mixture of tamarine and fresh water)
  • 1 teaspoon palm sugar
  • salt to taste

Method

  • Remove away the ink bladder, the thin bones and the epidermis, then washed and sliced across to get ring-like shapes. Set aside.
  • Heat cooking oil, sauté the ground spices/seasoning until aromatic.
  • Add squids, stirred until rigid and mixed well with the ground spices.
  • Pour the coconut milk and let it come into a stew.
  • Add the rawit chilis. Wait until slightly wilt, then remove from the stove.
  • Ready to be served.
