Brongkos Daging

Bahan-bahan

  • 1/2 kilogram daging sapi, dipotong-potong 3 x 3 cm
  • 1 mangkuk kacang panjang yang telah dipotong-potong 3-5 cm
  • 750 cc santan dari 1/2 butir kelapa
  • 2 ruas jari lengkuas, dimemarkan
  • 1 batang serai, dimemarkan
  • 2 lembar daun salam, dimemarkan
  • minyak goreng secukupnya

Bumbu Halus

  • 3 biji kluwak
  • 4 butir bawang merah
  • 2 siung bawang putih
  • 1/2 sendok teh merica
  • 1/2 sendok teh terasi
  • 5 buah cabai merah
  • 2 cm kunyit
  • 2 cm jahe
  • 3 butir kemiri
  • garam secukupnya

Cara Membuat

  • Tumis bumbu halus hingga beraroma, masukkan daging, aduk-aduk hingga setengah matang.
  • Masukkan santan, daun salam, lengkuas dan serai.
  • Rebus hingga santan agak mengental dan daging empuk.
  • Masukkan kacang panjang dan teruskan merebus hingga kacang panjang empuk dan bumbu meresap.

Beef In Black Condiment

Ingredients

  • 1/2 kilograms beef, cut into 3×3 cm
  • 1 medium bowl sring beans which cut into 3×5 cm
  • 750 cc coconut milk
  • 4 cm galangal, flatened
  • 1 lemongrass, flatened
  • 2 bay leaves
  • 2 tablespoons cooking oil or to taste

Ground Spices and Seasonings

  • 3 kluwaks (Pangium Edule), shelled and of course use only the flesh
  • 4 shallots
  • 2 cloves garlic
  • 1/2 teaspoon pepper
  • 1/2 teaspoon terasi (shrimp paste)
  • 5 red chilis
  • 2 cm turmeric
  • 2 cm ginger
  • 3 candlenuts
  • salt to taste
  • All in this part are ground together until smooth

Method

  • Sauté ground spices until aromatic, then add beef, stirred until beef is half done.
  • Add coconut milk, bay leaf, galangal and lemongrass.
  • Wait until beef is tender and coconut milk turns thicker.
  • Add string beans and wait until string beans are soft then served.
