Bebek Goreng

Bahan-bahan

  • 1 ekor bebek, dipotong menjadi 4 bagian
  • 1 sendok makan cuka masak
  • 1/2 sendok makan garam
  • 500 ml minyak goreng
  • 1 lembar daun salam
  • 1 batang serai, memarkan
  • 200 ml air

Bumbu Halus

  • 1 sendok teh ketumbar
  • 2 cm jahe
  • 1/2 sendok makan garam
  • 3 butir kemiri
  • 3 siung bawang putih

Cara Membuat

  • Cuci bersih bebek, lalu rendam tiap-tiap potong dalam campuran air, cuka dan garam selama 15 menit. Cuci bersih lagi lalu tiriskan.
  • Rebus bebek dengan bumbu halus, daun salam dan serai sampai daging bebek lunak. Angkat lalu tiriskan.
  • Panaskan minyak, goreng daging bebek sampai berwarna kecoklatan. Angkat dan tiriskan.
  • Hidangkan daging bebek dengan sambal dan lalapan sesuai selera.

Fried Duck

Ingredients

  • 1 duck, cut into 4 parts
  • 1 tablespoon vinegar
  • 1/2 tablespoon salt
  • 500 cc cooking oil
  • 1 piece bay leaf
  • 1 stalk lemongrass, crush
  • 200 cc water

Ground Spices and Seasonings

  • 1 teaspoon coriander (not powder)
  • 2 cm ginger
  • 1/2 tablespoon salt
  • 3 candlenuts
  • 3 cloves garlic

Method

  • Wash duck well, then soak every part of duck cuts in mixture of water, vinegar and salt for 15 minutes. After that wash again well and then drain.
  • Boil duck together with ground spicess, bay leaf and lemongrass until duck cooked and tender. Drain well.
  • Heat cooking oil, fry duck until brownish, drain.
  • Serve together with chili sauce and some raw vegetables such as thinly sliced cucumber, sliced tomato, string beans and cabbage leaves.
