Bandeng Bumbu Bali

Bahan-bahan

  • 1 ekor ikan bandeng
  • 3 potong tahu
  • 2 butir telur ayam

Bumbu Halus

  • 6 buah cabai merah
  • 4 siung bawang putih
  • 3 buah tomat
  • 3 butir kemiri
  • 3 buah cabai rawit
  • 1/2 sendok teh gula
  • 1 ruas jari jahe
  • 1 sendok makan kecap manis
  • garam dan lada secukupnya

Cara Membuat

  • Bersihkan ikan bandeng, buang isi perutnya, lalu potong sesuai selera. Goreng hingga agak kering.
  • Rebus telur, kupas.
  • Potong tahu tipis-tipis lalu goreng agak kering.
  • Tumis bumbu halus hingga beraroma. Tambahkan kecap dan air.
  • Masukkan ikan bandeng, tahu dan telur.
  • Biarkan hingga mendidih dan kuah mengental / agak kering. Angkat.

Balinese-Style Spicy Milkfish

Ingredients

  • 1 milkfish
  • 3 (2″x2″x2″) beancurd (tofu)
  • 2 eggs

Ground Spices and Seasonings

  • 6 red chilis
  • 4 cloves garlic
  • 3 tomatoes
  • 3 candlenuts
  • 3 bird’s eye chili
  • 1/2 teaspoon sugar
  • 2 cm ginger
  • 1 tablespoon sweet soy sauce
  • cooking oil
  • salt and pepper to taste

Method

  • Remove the inside part of milkfish away, then washed and cut to taste. Deep fry until nearly crispy.
  • Boil eggs until cooked then shelled.
  • Slice tofu thinly, then deep fry until nearly crispy.
  • Sauté; ground spices until aromatic. Add soy sauce and water.
  • Add milkfish, tofu and eggs.
  • Wait until boiling and the sauce thickened, then served.
