Ayam Sari Rasa

Bahan-bahan

  • 700 grams ayam buras, potong menjadi 8 bagian
  • 2 lembar daun salam
  • 2 sendok teh asam Jawa
  • 500 cc air kelapa muda
  • 500 cc minyak goreng

Bumbu Halus

  • 5 siung bawang putih
  • 10 butir bawang merah
  • 2 cm lengkuas
  • 2 sendok teh gula Jawa
  • 2 sendok makan garam halus

Cara Membuat

  • Lumuri potongan ayam dengan bumbu halus hingga rata. Taruh dalam wajan.
  • Tambahkan daun salam, asam Jawa dan air kelapa. Masak ayam di atas api kecil selama satu jam atau hingga ayam empuk dan bumbu terserap habis. Bila perlu tambahkan sedikit air kelapa muda lagi. Angkat.
  • Panaskan minyak untuk menggoreng. Goreng ayam hingga kuning kecoklatan. Angkat, sajikan.

Flavor Core Chicken

Ingredients

  • 700 grams chicken, divide into 8 parts
  • 2 bay leaves
  • 2 teaspoon tamarind
  • 500 cc young coconut water (NOT coconut milk)
  • 500 cc cooking oil

Ground Spices and Seasonings

  • 5 cloves garlic
  • 10 shallots
  • 2 cm galangal
  • 2 teaspoon palm sugar
  • 2 tablespoon salt

Method

  • Apply every part of chicken with ground spices evenly. Put them on a pan.
  • Add bay leaves, tamarind and coconut water. Boil over little flame for an hour or until the chicken tender and the ground spices is completely absorbed. If necessary add a little more coconut water. Remove from stove.
  • Prepare hot cooking oil, fry chicken until become yellow-brownish. Drained and served.
