Bahan-bahan
- 1 ekor ayam
- 250 cc santan kental
- 500 cc santan encer
- 75 grams petis udang
- 20 butir bawang merah, iris tipis-tipis
- 5 siung bawang putih, iris tipis-tipis
- 3 cm kunyit, disangrai
- 1 ruas jari laos, dimemarkan
- 1 ruas jari jahe, dimemarkan
- 1 sendok makan air asam Jawa
- 10 biji cabai rawit
- air jeruk nipis/lemon secukupnya
- minyak goreng secukupnya
Cara Membuat
- Ayam dipotong-potong menjadi 8 bagian. Cuci bersih, perciki dengan air jeruk secukupnya.
- Panaskan 4 sendok makan minyak goreng, tumis bawang merah dan bawang putih sampai harum.
- Tambahkan kunyit, lengkuas, jahe dan cabai rawit, aduk-aduk sampai layu.
- Tambahkan air asam, santan encer, petis udang dan ayam. Tunggu sampai bumbu dalam keadaan kental.
- Tambahkan santan kental dan biarkan beberapa saat sampai santan mengering.
Chicken with Fermented Shrimp Paste
Ingredients
- 1 chicken
- 250 cc thick coconut milk
- 500 cc thinly coconut milk
- 75 grams fermented shrimp paste
- 20 shallots, thinly sliced
- 5 cloves garlic
- 3 cm turmeric, fried first without cooking oil
- 5-6 cm galangal, crushed
- 5-6 cm ginger, crushed
- 1 tablespoon tamarind water
- 10 bird’s eye chilis
- lemon juice
- cooking oil
Method
- Cut chicken into 8 parts, wash and splash some lemon juice on.
- Heat 4 tablespoon cooking oil, sauté shallot and garlic until aromatic.
- Add turmeric, galangal, ginger and bird’s eye chili, stirred until they look wilted.
- Add tamarind water, thinly coconut milk, fermented shrimp paste and chicken. Wait until the seasoning thick.
- Add thick coconut milk and just wait until coconut milk dry up.
