Boil water, then add vinegar, sugar and salt, after well dissolved, cooled it down and filtered. Set aside.
Put shallots, garlic, ginger, red chili and bird’s eye chili on a pan or something like that, then brewed with boiling water. When cooled already, put them all inside the vinegar solution then store in a glass jar. Wait until 1-2 days before used/served.
Can be served as a side dish of fried rice, fried noodle etc, just 1-2 tablespoons.
