Acar Jamur

Bahan-bahan

  • 150 gram jamur merang segar
  • 10 gram jamur kuping 2 sendok makan cuka air, bukan biang cuka
  • 2 lembar daun salam
  • 15 cm serai/sereh muda
  • 1 sendok teh merica
  • 1 sendok teh garam atau sesuai selera
  • 1 sendok teh gula pasir
  • 200 ml air hangat untuk merendam jamur kuping

Cara Membuat

  • Bersihkan dan cuci jamur, biarkan utuh. Jamur kuping kemudian direndam air hangat selama 10 menit.
  • Jerang air secukupnya, masukkan cuka air, daun salam, sereh, merica, garam dan gula. Biarkan sampai mendidih.
  • Masukkan jamur merang dan jamur kuping tunggu mendidih, masak selama 5 menit, angkat jamur dan saring, biarkan airnya mendidih sampai beberapa saat, lalu angkat, tunggu sampai hangat.
  • Tempatkan jamur di dalam stoples bersama dengan daun salam dan sereh yang tadi ikut direbus, tuang air rebusan yang sudah hangat, tunggu hingga air dingin.
  • Tutup stoples rapat-rapat. Cuka bisa disajikan keesokan harinya.

Pickled Mushrooms

Ingredients

  • 150 grams mushroom
  • 10 gram ear mushroom
  • 2 tablespoons mixture of cooking vinegar with water
  • 2 bay leaves
  • 15 cm young lemongrass
  • 1 teaspoon pepper
  • 1 teaspoon sugar
  • 1 teaspoon salt or to taste
  • 200 ml warm water to soak ear mushroom

Method

  • Wash mushrooms leave them intact. Soak ear mushroom in the warm water for 10 minutes.
  • Boil some water together with vinegar, bay leaves, lemongrass, pepper, salt and sugar.
  • When boiling add mushrooms and wait until boiling again, and wait for 5 minutes more, take out mushrooms and drain but leave the water on stove boiling for some moment more, then remove from stove, let it warm down.
  • Put mushrooms in a jar together with bay leaves and lemongrass which are boiled together before, then pour the warm water, wait until it cool down.
  • Tightly covered the jar. Pickle can be used the next day.
