Abon Ikan Tongkol

Bahan-bahan

  • 750 grams daging ikan Tongkol
  • 3 lembar daun salam
  • 2 batang serai, dimemarkan
  • 1 buah pekak / bunga lawang
  • 1 1/2 sendok teh garam halus
  • 3 sendok makan minyak goreng

Bumbu Halus

  • 8 siung bawang putih
  • 1 sendok teh ketumbar
  • 1/4 sendok teh merica bubuk
  • 1/4 sendok teh jinten

Cara Membuat

  • Kukus daging ikan Tongkol sampai matang.
  • Suwir-suwir dagingnya, buang tulangnya.
  • Tumis bumbu halus, daun salam dan serai sampai harum.
  • Tambahkan suwiran daging Tongkol, pekak dan garam. Aduk sampai kering dan daging Tongkol hancur.

N.B : Untuk 300 grams abon.

Shredded Tunny

Ingredients

  • 750 grams Tunny flesh
  • 3 bayleaves
  • 2 stalks lemongrass, chushed
  • 1 star anise (badiane in French)
  • 1 1/2 teaspoon salt
  • 3 tablespoon cooking oil

Ground Spices and Seasonings

  • 8 cloves garlic
  • 1 teaspoon coriander
  • 1/4 teaspoon pepper powder
  • 1/4 teaspoon cumin

Method

  • Steam tunny flesh until cooked.
  • Shred the flesh, remove all the bones away. Set aside.
  • Sautéed ground spices, bayleaves and lemongrass until aromatic.
  • Add shredded tunny flesh, star anise and salt. Stirred and stirred until all looked dry and tunny flesh well crushed.
  • Served as side dish to any kind of nasi or bread.
